Brought up in a big traditional Sicilian family, Salvatore learnt the basics with Mamma and Papa, helping them in their catering business (friggitoria).
At the age of 16, Salvatore had already made a name for himself in catering and was regularly called upon to organise private dinner parties for the wealthiest families in Palermo. He would travel to his clients’ villas on his vespa, with the fresh fish/ meat/ veg etc. which he would then prepare on site in front of all the guests.
His dream was always to start his own business so, after perfecting his craft at the luxury Kulm hotel in Switzerland, he came to the UK to work. He then became a director of one of the best known Italian restaurants in Cheltenham and subsequently he managed to start his second business “Dolce and Salato” (Sweet and Savoury) in Winchcombe Street.
